I’ve been without a stove or oven for a week now, and today I was informed that my  new cooktop, microwave, and oven won’t be here for another two weeks.  The sink I’ve ordered won’t be here for forty days.  As you can imagine, trying to plan meals without any cooking appliances is somewhat challenging.  I’m relegated to cooking on either my indoor Breville grill or the firepit.  It’s 101° F today, so I’m definitely not cooking outdoors over an open fire!

Thus, tonight’s menu is going to be very simple: grilled chicken & vegetable kabobs with a side of corn steamed in the microwave.  This is a very simple dish to make, but it’s quite tasty and uses seasonal vegetables from the farmer’s market.  The key is in the marinade:

INGREDIENTS:

1/3 cup freshly squeezed lemon juice

2 Tbsp. Dry Mustard

1/2 cup Worcestershire Sauce

1 1/2 cups olive oil

1 1/2 tsp. finely minced fresh parsley

1 Tbsp. ground black pepper

1 tsp. kosher salt

1/2 cup red wine vinegar

3/4 cup soy sauce

DIRECTIONS:

Mix together all ingredients in a bowl large enough to hold your chicken and vegetables.  Marinate for 2-24 hours.  The longer you marinate, the better the flavor!
